Recipes Needed (Again)

Good Monday Morning!

Catching up on weekend posts?
Phew!  A busy weekend, a great worship service, a powerful funeral and lots of fun work around the house.  How was your weekend?

I've got a long to-do list at work today, but I did have a recipe question.


One of my church members dropped these off in my office yesterday.  Zucchinis galore!

Of course now I need recipes so I can do something with them.  Help?

  2. Awesome Zucchini Bread

    3 eggs
    2 cups sugar
    3 cups shredded zucchini
    2 teaspoon vanilla extract
    1 cup oil
    3 cups flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon baking powder
    2 teaspoons cinnamin

    mix eggs and sugar, add oil, add zucchini, add vanilla..mix well. Add dry ingredients, mix well. pour into pans(bread pans or 9x13). bake at 350 for ~1 hour.

    *can add nuts if you want..i think it tastes great with walnuts(about a cup, chopped)*

  5. Stuffed.... Slice in half. Scoop out the middle, leaving an edge on each end. Brown italian sausage or ground beef. Add cumin. In another pan brown onion, red and green bell peppers, some of the zucchini, and garlic. Add tomatoes at the end. Mix the meat and veggies mix together. "Stuff" the shells. Top with bread crumbs and parmesan cheese. Bake at 350 for about an hour. Delicious!

  6. Hi Sarah. I love Zucchini Lasagna. I found it on http://theitaliandishblog.com/. That's my go to meal if I have a lot of zucchini. It's not the prettiest lasagna, but it sure is good. Buon Appetit!

  9. Hi Sarah, I tried this zucchini bread recipe last weekend for the 4th of July and everyone loved it! I did have to cook it a little longer than the instructions stated, but it was delicious!
