Keck Potatoes

Yesterday I sent my dad the following text:

"HELP!!!!!"

Then a few minutes later I followed up with:

"I need to know how to make your 'Keck Potatoes'."

Yes, I thought the need for a potato recipe called not only for all-caps, but also for five exclamation points.

Not that I'm over dramatic or anything.

Anyway, 'Keck Potatoes' are essentially seasoned baked potato slices.  They have always been a staple at family picnics and church potlucks - they are so tasty and versatile in terms of what they can be served with.  I never actually watched my dad make them, so I was shocked at how easy they were!  Here's what you do ...

Keck Potatoes
3 medium-sized Russet Potatoes
1/2 stick Butter
Sea Salt
Pepper
Garlic
Paprika


Start with your potatoes - give 'em a nice scrub to start off!

*Keep in mind I was cooking for two - when my dad makes these he usually makes 6-8 potatoes, in which case he also uses a full stick of butter.


Slice the potatoes into 1/4-1/2 inch slices.  Line them in a baking dish.


Melt your butter (you could do this in a microwave, but we're trying life without a microwave so I melted it on the stove) ... 


... and pour it over the potatoes.


Generously season the potatoes with your salt, pepper, garlic and paprika and throw them into a 400 degree oven for 45 minutes to an hour (until the potatoes are soft).  My dad usually makes twice as many as I did yesterday and needs the full hour for them to bake - just keep an eye on them.


Typically we have served these with chicken, steak, burgers, etc.  However, last night I had other ideas.


I put them on a salad.


In the salad:
  • Romaine
  • Tomatoes
  • Cucumber
  • Kidney Beans
  • Grilled Chicken
  • Keck Potatoes
...  and everything was drizzled with Ranch Dressing!


The seasonings in the potatoes + the ranch dressing created a flavor in the salad that was out of this world.  I will be doing this again!

  2. Add velveeta cheese and thinly sliced onIons, wrapped in foil and cooked on the grill and those are the potatoes we had many Sundays growing up in PA! Dang. Now I want some. :)

  4. Yum! I put potatoes on a salad recently and LOVED it. I thought it might just be a pregnancy/Sarah-loves-potatoes thing, but looks like I was wrong!
