Chocolate Chip Pancakes

Yep.


That'll do it.

I went to bed last night thinking about Chocolate Chip Pancakes.

Is that weird?

Wait, don't answer that.

Anyway, I woke up this morning and decided to adjust my Sweet Flapjack Pancake Recipe and make some mouth watering Chocolate Chip Pancakes.  Mission accomplished.  Here's the recipe!

Chocolate Chip Pancakes


1 1/2 cups Flour
4 teaspoons Baking Powder
1 teaspoon Salt
1 cup Milk
1 egg
3 tablespoons Butter, melted
1 cup Chocolate Chips

*Essentially what I did was eliminate everything that made the sweet flapjack recipe sweet - no sugar or vanilla and a little bit more salt.  There was enough sweetness from the chocolate chips.  I also wanted the pancakes to be a little bit thicker (more cake, less flap), so I decreased the milk.*


Start by throwing your flour into a mixing bowl.


Then add your baking powder ... 


And your salt.

Then acknowledge the person that got you the awesome bowls you put your ingredients in.  Thanks Sarah!


Then pour in the milk ...


And crack the egg into the bowl.


Melt the butter (I put it into the microwave on LOW for two minutes) and pour it in.  Turn the mixer on and let it whisk for about two minutes, pausing once or twice to scrape the side of the bowl.  Because this is a thicker mixture, you want it really well blended.


Pour the pancake batter onto a heated skillet (I heat mine to 350 degrees).


Then drop the chocolate chips onto the pancakes.

(This method works better than adding the chips to the batter and then pouring out the pancakes.  Doing that can make the batter clumpy and hard to work with.)


Wait until the bottom and sides have cooked and flip!


Garnish with some confectioner's sugar for a little bit of pizazz!



Yum.  Yum.  Yum.

  1. Dang, now THERE'S some perfect pancakes!! And it's totally not weird for you to go to bed thinking of them. I do the same thing with overnight oats whenever I fix them. :P

  2. How did you KNOW?! I've been thinking about chocolate chip pancakes for days now. This recipe + some melted peanut butter and sliced banana on top sounds PERFECT to me.
