Chicken & Mushroom Spaghetti

Well, yum.


Lunch today was a classic example that you can take ingredients that you use a lot (cream of mushroom soup, mushrooms, chicken) and create a dish with completely new flavors!  I hope you enjoy this as much as I did ...

Chicken & Mushroom Spaghetti
(this will only make 2-3 servings - adjust measurements as needed!)

1 Chicken Breast
1 can Cream of Mushroom Soup
1 can Water
1 can Mushrooms
1-2 tablespoons Minced Onion
1 tablespoon Flour
Black Pepper, to taste
Paprika, to taste
Spaghetti of your choice (I used Capellini!)

Start by bringing a pot of water to a boil and drop the chicken breast in to cook.  I forgot to take a picture of this part of the process because Bruce needed his social security card and I was tearing my house apart frantically trying to find it.  So close your eyes and picture it.

The chicken part.  Not the tearing my house apart frantically part.  No one needs to see that.

While the chicken is boiling, heat up a skillet ... 


And drop about a half a tablespoon of butter into it.  Let it melt.


Drain the can of mushroom and throw them into the skillet with the minced onion.


Stir and saute, stir and saute, stir and saute.


When the mushrooms are cooked, transfer them onto a plate.


Return the skillet to the burner, lower the heat and add the cream of mushroom soup and water.  Whisk until combined.


Add one tablespoon of flour to thicken up the sauce.


Whisk everything together.


Season with lots of black pepper ... 


And paprika.  Let the sauce simmer.


At this point your chicken should be cooked, so remove it from the water and - using two forks - shred it into pieces.

You can re-use the pot that your chicken was cooking in to make the spaghetti.  Just add some more water if needed.


Add the chicken and the mushrooms back into the skillet.


And stir everything together.


Once your spaghetti is cooked, you're ready to eat!


Serve up a big scoop of spaghetti ... 


And top it with your sauce.


Serve and ENJOY!
