A Friendly Brunch

Look who came to visit me today!


My friends Dawn and Heather - we've been friends since middle school!  I love the fact that I'm living back in my hometown right now because when my friends come to visit family I'm already here!  Dawn lives in D.C. and Heather lives in Philadelphia and I don't think I've seen either one of them since my wedding.  We're hoping to plan a get together in one of their cities sometime soon (I'm secretly hoping for D.C. because I've never done the fun touristy stuff there).


We decided to save some money and make brunch at home, rather than going out!  It was fun to host people for the first time!  They didn't mind my lack of table ... :)

First on the menu:  Fruit Salad a la Heather.  Everything was so fresh and delicious (and I discovered that kiwis photograph beautifully!).


Dawn took care of the pancakes.  We used the same recipe that I used a few weeks ago (found here) and we all agreed that it makes so much more sense to just make pancakes from scratch, rather than buying mix!  You most likely will have everything in your pantry already.


I made scrambled eggs.  I put the eggs in when the pan was still warming up and they we were fluffy, but not dried out at all!  Definitely a technique I would try again.


My plate.  Yum yum yum ...


With two cups of coffee and a glass of Simply Orange with Mango.  Definitely a delicious juice that I would try again!  The mango actually cuts out some of the acidity of the orange and makes for a smooth juice.

Sorry this is so quick - my mom and I are off to brave the crazy last minute holiday shoppers.  Wish us luck!
