Falling For Fall

I love fall.  Have I mentioned that on here before?

To make a long story short I had both my car and scooter at work this morning, so I scooted home for lunch, walked back to work and then drove home this afternoon. It sounds complicated, but it gave me the opportunity for an amaaaaaazing 2.5 mile walk back to work!

Lunch was fall inspired as well.


Tomato Basil Soup and Grilled Cheese.  Same as dinner last night, but the presentation is way better!


I love canned soups because they are simple and quick, but you can also easily give them a little extra flavor!  The ground pepper makes this soup pop!  Such a hearty meal.


Dinner was simple.  Two fried eggs with sea salt and ground pepper and shredded cheddar cheese.


Sandwiched on this delicious sourdough bread we've been working our way through!

Today has definitely been a day for simple meals.  Actually, it may be like until we move - half of our kitchen is packed!  But I love the fact that I am realizing that quick and easy can still be hearty and delicious (and not takeout!).  Our first two years in Atlanta were full of kitchen disasters and frustrating "What do you want for dinner? I don't care, what do you want?" conversations.  Blogging about my successes (big and small) in the kitchen has helped me so much in terms of confidence and creativity when I'm faced with every day meals.

Three cheers for culinary confidence and creativity!

Okay, time to wind down for the night.  Can you believe the half marathon is ONE WEEK FROM TODAY?  Crazy.
