Rain, Beautiful Rain ...

I know this is going to sound weird, but today was a glorious day!

It rained for most of the afternoon, but the temperature stayed above freezing and some of the snow has melted down!

Plus ... Rain = Free Car Wash

My sister is at my parents' house for the weekend, so they invited us up for dinner.  My dad made a wonderful Mexican spread!

I made two soft shell tacos, filled with re-fried beans, chicken, guacamole, lettuce, tomatoes, cheese and salsa.

The shells were wayyyyy to full to actually eat in one piece, so I used the chips to scoop out some of the fixins' before eating the tacos.  Worked perfectly!

I actually think I could have left out the chicken and kept the whole meal vegetarian.  The beans (which I've only recently started using) really give a lot of substance to the taco.  If you've never tried them, I would encourage you to!  It's a cheaper alternative, too.

I've got a date tonight with an Oklahoma Love Story! :)
