Dinner Update

Dear Mothers Everywhere,

I don't know how you do it.  In fact, I am currently bowing down at your awesomeness.

The next paragraph is going to make a lot of people laugh.  Bear with me.

In response to my post this morning, a lot of you suggested mac 'n cheese, pizza, chicken nuggets, etc. etc.  My initial thought was to do something simple - boxed mac 'n cheese + pre-made chicken nuggets + one vegetable - but then I wondered, "Is that boring?"  "Is that a cop-out?"  "I can do better than that, right?"  But then I realized that I had to work and wouldn't have a ton of time for prep - so I went with it.

On the menu tonight:
  • Mac 'n Cheese
  • Chicken Nuggets
  • Green Beans
  • Applesauce
That sounds simple enough, right?  That meal would normally take me 15 minutes.

Suffice is to say it took a LOT longer to make than it normally would.  Bruce said to me on our way home, "What was up with you tonight?"  Apparently it's harder to cook when you have a baby in one arm and little ones running in and out.

Who knew?

Anyway, we're home now and trying to clean up - I'm way behind on laundry and "deep clean" jobs (the kitchen sink needed to be SCRUBBED!) and Bruce is working his magic on our basement!  I love when my house sparkles. :)

But before I sign off for the night ...


Check out our lettuce looking like real lettuce!


We have two different kinds of lettuce in right now.  I can't wait to pick a little bit of this and a little bit of that!


The potato plants are starting to bloom!  Bruce says that once the flowers open you can start to dig potatoes.  Neat, right?


The tomatoes are well on their way as well.

A laundry basket is calling my name.  Goodnight!

  1. Well... most mom's don't just jump into five kids all of a sudden. :) But yes... adding kids to the mix makes everything a little more complicated.
