Sweet Roasted Acorn Squash

Good morning!  Let the coffee flow this morning.


I'm going to need this times five.


Simple.

My entire body feels like it needs to be stretched like a rubber band right now.  I am just tight all over.  When I first started running again, I was really good about stretching - but as the distances got longer and I got busier at home and work, I slacked - and I can feel it!  Today's goal is to stretch it out.

Okay - as promised!  The "recipe" for the Sweet Roasted Acorn Squash that Gib made this weekend.  I take ZERO credit for this, it was totally Gib's brainchild.

Sweet Roasted Acorn Squash
Acorn Squash
Brown Sugar
Syrup
Butter


When Gib picked these up, I said, "We're going to do what?"  They just don't look delicious.  But they are.


Slice the squash in half and clean out all the gunk.


Mix together softened butter, brown sugar and syrup.  Gib doesn't measure.  Just eyeball it for this consistency.  Pour the mixture into the squash and bake for an hour at 400 degrees.


An hour later ...  


This is so amazing, because you dig into the squash with a fork, but the sugar/syrup/butter mixture soaks and seeps into every bite. 


Oh my.

  1. Yum! That looks so tasty, but I might have a heart attack by the time I'm done eating half of it. Haha! It probably would be worth it :-)
