Dinner Nachos

I have a confession to make.

I served nachos for dinner last night.

But in fairness to me ... I think they were relatively healthy!  Here's what I did ...

Dinner Nachos

1 pound Ground Beef
1 can Black Beans
1 can Whole Kernel Yellow Corn
1 can Hominy
1 can Rotel
Cheddar Cheese, shredded
Picante Sauce
Tortilla Chips


Start by browning your beef ... 


Meanwhile, strain and rinse the black beans, corn and hominy.


Drain the meat (if it's not lean) and add the veggies, turn heat to med-low and stir often.


Add rotel (I don't drain the rotel, because I like to keep all the flavor!)


Stir into the skillet of goodness.


Get your cheese grated ... 


... and start building your nachos.  Start with the chips.


... add a layer of the beef and veggies ... 


... then cheese ... 


... and top with picante sauce.


Devour.  Yum.

The best part?  (Okay, ONE of the best parts?)  Finger food - no fork = less to clean up.

So what do you think - healthy?  Yes?  No?  Am I kidding myself in thinking I can put this in the "dinner" category of my recipes?

  1. I make a version of this for dinner once in a while too. I often use ground turkey to make myself feel better about it. If you go light on the chips, cheese & sour cream, the meat & veggie mixture is pretty healthy so no worries.
